2 tbsp black sesame seeds (toasted)
2 tbsp soy sauce
1 tbsp sesame oil
1 tbsp rice vinegar
1 tsp honey or maple syrup
1 cucumber (julienned)
1 cup red cabbage
1 carrot (julienned)
2 spring onions (thinly sliced)
Fresh coriander leaves (for garnish)
Lime wedges (for serving)
Instructions
Cook the noodles: Bring a pot of water to the boil and cook your soba noodles according to the package instructions. Drain and rinse under cold water to cool them down.
Prepare the sauce: In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, and honey until well combined.
Toss the noodles: In a large bowl, combine the cooled noodles with black sesame seeds, julienned cucumber, carrot, red cabbage, and sliced spring onions. Pour the dressing over the noodles and toss to coat evenly.
Serve & garnish: Divide the noodles into bowls and garnish with fresh coriander leaves. Serve with lime wedges on the side for an extra burst of freshness.
