- 200g soba noodles (or any thin noodles of your choice)
- 2 tbsp black sesame seeds (toasted)
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp rice vinegar
- 1 tsp honey or maple syrup
- 1 cucumber (julienned)
- 1 cup red cabbage
- 1 carrot (julienned)
- 2 spring onions (thinly sliced)
- Fresh coriander leaves (for garnish)
- Lime wedges (for serving)
Instructions
- Cook the noodles: Bring a pot of water to the boil and cook your soba noodles according to the package instructions. Drain and rinse under cold water to cool them down.
- Prepare the sauce: In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, and honey until well combined.
- Toss the noodles: In a large bowl, combine the cooled noodles with black sesame seeds, julienned cucumber, carrot, red cabbage, and sliced spring onions. Pour the dressing over the noodles and toss to coat evenly.
- Serve & garnish: Divide the noodles into bowls and garnish with fresh coriander leaves. Serve with lime wedges on the side for an extra burst of freshness.
