Black Sesame Summer Noodles

A refreshing and flavourful dish for those warm, sunny days!


Ingredients:

  • 200g soba noodles (or any thin noodles of your choice)
  • 2 tbsp black sesame seeds (toasted)
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tsp honey or maple syrup
  • 1 cucumber (julienned)
  • 1 cup red cabbage 
  • 1 carrot (julienned)
  • 2 spring onions (thinly sliced)
  • Fresh coriander leaves (for garnish)
  • Lime wedges (for serving) 

Instructions

  • Cook the noodles: Bring a pot of water to the boil and cook your soba noodles according to the package instructions. Drain and rinse under cold water to cool them down.
  • Prepare the sauce: In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, and honey until well combined.
  • Toss the noodles: In a large bowl, combine the cooled noodles with black sesame seeds,  julienned cucumber, carrot, red cabbage, and sliced spring onions. Pour the dressing over the noodles and toss to coat evenly.
  • Serve & garnish: Divide the noodles into bowls and garnish with fresh coriander leaves. Serve with lime wedges on the side for an extra burst of freshness.
  • Enjoy chilled: Serve this dish cold for a refreshing summer meal that’s as light and bold as your summer style.
