Beat the Heat with this Refreshing Summer Drink and Colourful, Nutrient-Packed Salad – Perfect for Relaxing Days in the Sun


Watermelon Mint Cooler

Ingredients:

  • 4 cups watermelon (cubed, seeds removed)
  • Juice of 1 lime
  • 1 tablespoon honey or agave syrup (optional)
  • 8-10 fresh mint leaves
  • Sparkling water or soda water
  • Ice cubes

Method:

  1. Blend the watermelon cubes in a blender until smooth. Strain through a fine sieve to remove any pulp (optional).
  2. Combine the watermelon juice, lime juice, honey (if using), and mint leaves in a pitcher. Muddle the mint gently with the back of a spoon to release its flavour.
  3. Add ice cubes and top with sparkling water.
  4. Stir gently and serve with a sprig of mint and a small wedge of watermelon for garnish.

Citrus Avocado Salad

Ingredients:

  • 2 oranges, peeled and sliced
  • 1 grapefruit, peeled and sliced
  • 1 avocado, sliced
  • 2 cups mixed greens (e.g., arugula, spinach, or mesclun)
  • 1 small red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup pomegranate seeds
  • 2 tablespoons olive oil
  • 1 tablespoon white wine vinegar or lemon juice
  • 1 teaspoon honey or maple syrup
  • Salt and freshly ground black pepper
  • Optional: Toasted almonds or pumpkin seeds for crunch

Method:

  1. Arrange the mixed greens on a large serving plate or bowl.
  2. Top with slices of orange, grapefruit, avocado, red onion, crumbled feta, and pomegranate seeds.
  3. Whisk together olive oil, white wine vinegar or lemon juice, honey, and a pinch of salt and pepper in a small bowl.
  4. Drizzle the dressing over the salad and toss gently to combine.
  5. Sprinkle with toasted almonds or pumpkin seeds if desired, and serve immediately.
